Soft Gingerbread Cookies

What is the key to soft gingerbread cookies with six ingredients? Spice cake mix. Perfect for last-minute holiday baking or gifting, these pillowy cookies are easy to customize. If you're looking for a stronger flavor, you can always increase the ginger to 2 teaspoons, but keep in mind that most spiced cake mixes on the market are already too strong.
Preheat oven to 350°F (180°C). Cover a baking sheet with parchment paper.


Steps

Combine cake mix, ginger and cloves. Add the eggs, oil and molasses to the cake mix and mix until combined.


Using a spoon or tablespoon, drop dough onto prepared baking sheets about 2 inches apart.


Bake in the preheated oven for 10 to 12 minutes until the cakes are firm. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
